Brown rice (the instant stuff from Uncle Bens is good), black beans (canned and rinsed well), salsa of choice, top with shredded cheese. If you want a little meat, add either some canned chicken or meat from a rotisserie chicken from the grocery store. You can eat the leftover chicken for lunch the next day.

Breakfast burritos are great anytime too. Scrambled eggs, cheese, salsa and tortillas. Add sausage if you want some meat.

These are both great meals that are real food, can be made quickly and with only a microwave and have gotten me through more than my share of nights when I'm traveling and working 2nd and 3rd shift.

Are you driving? If you had room in your car, you could bring a crock-pot. That's frugal cooking PLUS you wouldn't have to get back to your place early to cook!

One of my faves is some frozen chicken in the bottom of the crock, with a jar of salsa, can of corn, can of black beans on top of it. Serve over rice or in tortillas.

How about a bag of stir fry veggies(some at Aldi have meat for $4.00). Serve over brown rice. Cut some fresh tomatoes, cantaloupe, and or cumcumbers to have with it. A box of ice cream on a stick is a good dessert. Have fun.

An easy quick meal for us are Taco's! I brown the ground beef (ground turkey for healthier taco's) add BBQ sauce and have everyone add their own cheese, lettuce and tomatoes.
